The techniques covered by the kit: Emulsification: Creating a foam – Cloud of Sugar - that floats on top of the drink giving a twist on the sugar element of the drink. Reverse-Spherication: Making bubbles of Mojito – the drink is encapsulated in a gel and literally eaten off a spoon so the Mojito Bubble “pops” in your mouth. Basic Spherication: Create floating caviar containing the mint component of the Mojito.

The additives included in the Molecular Margarita Kit are: Calcium Lactate – four sachets (a naturally occurring salt, used as a flavour enhancer and preservative. In this kit it is used for forming a hydrocolloid with the sodium alginate) Sodium Alginate – two sachets (a carbohydrate extracted from seaweed and usually used in baking) Soy Lecithin – two sachets (an emulsifier found in eggs and soybeans used in making emulsion such as mayonnaise) These are all pre-weighed so you won’t need any micro-scales to get the quantities precise. There are enough ingredients included to have plenty of fun and practice and when you need more, replacements are available.
